CHESTNUT & CRANBERRY SOURDOUGH STUFFING

I've been promising you this recipe for years, & it is well worth the wait. This is my go-to stuffing recipe for Thanksgiving and the holidays and it's so easy, you'll barely need the recipe.

It starts with a mirepoix base seasoned with my SAVORY spice blend, then you add sourdough bread, fresh cranberries, chestnuts, and herbs, mix with chicken or turkey broth, and bake. That's it! Plus, you can make it a couple of days ahead of time & simply reheat on the day of the event. Easy!

PESTO ROASTED CARROTS

6-MINUTE SALMON

If you've been following me on Instagram for the last couple of months, you might have seen I have a new favorite dish to make–my 6 minute salmon. As much as we all say we like variety, most of us eat the same foods over and over again. I'm no different from anyone else in that way, though some of foods/meals I have on repeat may seem unconventional to most Americans. This 6 Minute salmon is one of those meals–it's my go-to breakfast, and I could seriously eat this EVERY DAY.

While the recipe calls for Balanced Bites SAVORY Spice Blend, this would also be delicious with COFFEE BBQ.

GLUTEN-FREE SAUSAGE GRAVY AND BISCUITS

My husband Scott and I love to host an annual holiday champagne brunch for our friends here in San Francisco. We always try to make something special for our guests to enjoy each year, and a few years ago we decided on making some gluten-free sausage gravy & biscuits. We love using the ITALIAN and SAVORY spice blends in this dish.

THE BEST ROAST CHICKEN

I think we could all benefit from a little comfort right now, and I can't think of anything more comforting than a homemade roast chicken. In this recipe for the best roast chicken, I like to use SAVORY, GREEK, or TEX MEX spice blends, but really any of my Balanced Bites Spices will work here.

BACON, BRUSSELS, ASPARAGUS, & GOAT CHEESE FRITTATA

Frittatas – like this Bacon, Brussels, Asparagus & Goat Cheese Frittata – are one of the easiest ways to work veggies and extra protein into your morning.

And, I’m going to go out on a limb here and proclaim myself as not only a salad master, but *also* a frittata master.

One day, I'll blog my formula for how to make the best frittata, but here’s the gist of it:

+ Some sort of savory meat like bacon, sausage, chorizo, pancetta, shredded chicken, etc. I prefer something pork based but do you boo.

+ Leftover chunky vegetables that you chop up small, like broccoli, cauliflower, asparagus, butternut squash, Brussels sprouts, etc.

+ Fresh vegetables or leafy greens like finely chopped kale or spinach with seasoning added, I usually use Balanced Bites TRIFECTA blend.

+ Eggs whisked with some sort of milk (I use coconut) and seasonings – I often use Balanced Bites SUPER GARLIC, TRIFECTA, GREEK, RANCH, SAVORY, or ITALIAN blend and some extra black pepper. (Shop all Balanced Bites Spices here!)

+ Cheese. Of course it’s optional if you can’t do dairy, but I highly recommend trying different types of animal dairy to see if goat or sheep works for you versus cow. If you can’t do dairy you *must* use a really flavorful cured meat like bacon in the first step of umami! Oh, garlicky cooked mushrooms will work or caramelized onions for that umami as well. Otherwise, a bland frittata is in your future and you KNOW how I feel… #noblandfood.

Since I know a bunch of you will want a precise recipe as well, here's one of my favorites – it has all of the components of the formula above: salty bacon, crispy brussels, fresh asparagus, & creamy goat cheese – so good!

BUTTERNUT SQUASH SOUP

I've made butternut squash soup many times in my day, and I can honestly say that the homemade chicken broth makes ALL the difference. Keeping bone broth in the freezer is really a handy thing to do, so you can make this soup any time you please.

My go-to version of butternut squash soup uses non-traditional ingredients like a tiny bit of coconut milk and a splash of fresh orange juice – once you've tried it, it's the only one you'll make!

ROASTED CHICKEN WITH GARLIC, GHEE, & CARROTS

This Garlic and Ghee Roasted Chicken with Carrots recipe is perfect for two if you want to have leftovers and make them into chicken salad or soup, or it can feed a small family. Save the carcass to make bone broth from once you've finished the meat.

I'm pretty obsessed with roasting whole chickens. I think they're the perfect comfort food that make any weeknight special, and don't require much prep time at all. The chicken is easy to prepare with some simple spices along with veggies for roasting, and citrus if you like it – and that's it.

I used rainbow carrots here, but you can certainly use all orange carrots if that's what you have on hand. Or, alternatively, you can roast onions, celery, and carrots together with the chicken, or any vegetables you like that are heartier since they'll be roasting for quite some time.

SIMPLE GREEK-SPICED LAMB ROAST WITH CAULIFLOWER RICE

This simple recipe is perfect for any dinner where you want something that seems a bit more fancy, but without the added work. The artichokes and raisins in the cauliflower rice pair perfectly with the lamb to make a complete meal!

Ever since I started making healthy gluten-free foods, I have been amazed at the versatility and deliciousness of cauliflower: roasted cauliflower, cauliflower pizza crusts, mashed cauliflower. I could probably go on. I bet if you looked on Pinterest, there would be a recipe for cauliflower ice cream or a cauliflower croissant or a cauliflower treehouse. Pinterest is great like that.

So today, my fellow cauliflower-loving friends, I’m going to share with you a super crazy delicious cauliflower soup. It contains ground beef for protein, and. I just couldn’t resist sharing the recipe for these rosemary crackers, too. The lightly crisp cracker compliments the creamy texture of the soup and adds a delightful burst of rosemary.

It’s simple.

Not all delicious soups need to require hours in the kitchen. This recipe is simple and easy. You just cook a few things on the stovetop, blend them together, reheat the soup, and voilà! Get ready for some creamy goodness!

It’s heathy.

Grain free, gluten free, dairy free, paleo. Cauliflower is a source of a multitude of vitamins and minerals. This here is real, wholesome food.

It’s delicious.

What I love about this soup is that it’s so creamy and rich with flavor. Who knew comfort food could be so healthy and so paleo? 

BALSAMIC BRAISED SHORT RIBS

I had a handful of favorite meals back in the day when I ran an organic meal delivery business, and braised balsamic beef was at the top of the list. I’ve updated that recipe to include dates instead of brown sugar as the sweetener, and the result is a rich flavor that your family will love. This is also a fantastic dish to make for a potluck or Super Bowl party.

Great layering flavor!

One of my favorites! Savory Spice Blend adds perfect depth of flavor to so many dishes. If something is “missing” in a recipe I always reach for the Savory Spice Blend.
